Mushy Peas

Serves: Four | Prep: 5 min | Cook: 3 min

Ingredients:

Mushy Peas:
12 oz, about 3 cups frozen peas
3 Tbsp heavy/double cream
1 Tbsp butter
1 Tbsp freshly squeezed lemon juice
1/2 tsp salt
1/2 tsp pepper
1 Tbsp fresh mint, chopped

Directions:
Cook peas in salted boiling water for 3 minutes. Drain. Place drained peas, cream, butter, lemon juice, 1/2 tsp salt, and pepper into a food processor. Process until just about desired consistency. Pulse in fresh mint.
