Thyme Lemon Cookies

Serves: Makes twelve | Prep: 15 min | Cook: 8 min

Ingredients:

Lemon Thyme Cookies:
1/2 cup butter, room temperature
1/4 cup sugar
1 Tbsp fresh thyme, minced
2 tsp lemon zest
1 Tbsp freshly squeezed lemon juice
1 1/4 cup all-purpose flour

Glaze:
1 cup powdered/icing sugar
3 Tbsp freshly squeezed lemon juice

Directions:
Preheat oven 350F/180C. Line two baking trays with baking paper.

Cream butter and sugar together. Add thyme, lemon zest, and juice. Mix well. With the mixer on low speed, slowly add the flour until combined. Transfer dough on to a lightly floured surface and shape into a ball. Roll out dough 1/4-inch thick, cut with a floured cookie cutter. Bake, 8-10 minutes, until the edges are lightly browned. Transfer to a wire rack and let cool.

Make the glaze; in a bowl whisk powdered sugar and lemon juice together, a little at a time, adding more juice as needed to reach the desired consistency. Drizzle the glaze over the cooled cookies and sprinkle with fresh thyme leaves.
