Shrimp Salad on Endive Leaves & Seabay Breeze Cocktail

Ingredients:

Shrimp Salad on Endive Leaves:
2 lbs cooked shrimp, peeled, deveined and chopped
1 Tbsp freshly squeezed lemon juice
1/4 cup red onion, finely chopped
2 Tbsp fesh dill, minced
1 Tbsp fresh chives, minced
2 Tbsp capers
2 Tbsp red wine vinegar
1/2 tsp salt
1/4 tsp pepper
1/4 tsp red pepper flake
1/4-1/2 cup mayonnaise
2 heads endive, leaves removed

Seabay Breeze Cocktail:
1 lime wedge
1 Tbsp sugar
2 oz vodka
1 oz orange liqueur
1 oz freshly squeezed lime juice

Garnish:
Orange twist
Dehydrated lime

Directions:

Shrimp Salad on Endive Leaves:
In a large bowl add shrimp, lemon juice, red onion, dill, chives, capers, vinegar, salt, pepper, red pepper flake. Add the mayonnaise, starting with a 1/4 cup, stir. Add more mayonnaise, until desired consistency is reached. Place endive leaves onto a serving tray, fill leaves with a heaping spoonful of shrimp salad.

Seabay Breeze Cocktail:
On a flat plate add sugar. Rub the rim of a martini glass by running a lime wedge around the edge and dip into the sugar. In a cocktail shaker filled with ice add vodka, orange liqueur, and lime juice. Shake vigorously, pour into the prepared glass and garnish.
