Hot Corn Dip

Serves: Six | Prep: 10 min | Cook: 20 min

Ingredients:

Hot Corn Dip:
2 cups frozen corn, thawed and drained
8 oz cream cheese, room temperature
1/2 cup cheddar cheese, shredded
1 large tomato, chopped
1 jalapeno pepper, minced
5 scallions, thinly sliced

Directions:
Preheat oven 350F/180C

In a bowl mix all ingredients together. Transfer to an oven proof dish. Bake, 20 minutes, until golden and bubbly. Serve with crackers.
