Roast Fillet of Beef with Balsamic Caramelized Shallots

Ingredients:
Roast Fillet of Beef:
2 lbs whole beef fillet
2 tsp salt
1 1/2 tsp pepper
2 Tbsp olive oil
2 Tbsp butter
2 garlic cloves, peeled and smashed
1 rosemary sprig
2-3 thyme sprigs
Balsamic Caramelized Shallots:
1 1/2 lbs whole shallots, peeled
1 Tbsp butter
2 tsp sugar
1/2 tsp salt
1/4 tsp pepper
1 Tbsp balsamic vinegar
1 Tbsp fresh parsley, chopped
Directions:
Remove whole fillet from the refrigerator at least 30 minutes prior to cooking.
Preheat oven 375F/190C. Line a baking tray with aluminum foil and place a wire rack on top.
Season beef with salt and pepper.
To a large cast iron skillet, melt butter and oil over medium high heat. Add smashed garlic, rosemary and thyme sprigs. Sear beef on all sides, 3 minutes each side. Do not touch the beef while searing. Transfer beef to the prpared wire rack. Oven cook, 30-40 minutes. Internal temperature, 145F/63C for medium. Let meat rest for 10-15 minutes, before slicing.
To the cast iron skillet lower heat to medium, remove garlic and herb sprigs. Add 1 Tablespoon butter, shallots, sugar, salt, and pepper. Cook 10 minutes, stirring occasionally, until shallots start to brown. Add vinegar, stir, place in the oven and roast, until tender 20-30 minutes. Sprinkle with parsley before serving.
